Caffè Sun , with its registered office in Santarcangelo di Romagna at Via dell’Industria 40 and a separate production facility at the industrial plant located in Torre del Parco, Camerino, has been operating in the coffee roasting sector for about twenty years, drawing on the expertise of our roaster and partner, Renato Severini, who is also a biologist. Through the selection of raw materials and the proper roasting process, the company guarantees a high-quality final product. Caffè Sun operates directly in the regions of Emilia-Romagna, Marche, and Umbria, thanks to an efficient sales and technical service, and indirectly through authorized dealers in other Italian regions and abroad (the U.S., Ukraine, Libya, the United Arab Emirates, and various European Union countries, such as Germany and Spain).
The company is distinguished by two main brands: the first, Caffè Sun, focused on the production of Italian espresso coffee, with roasted coffee bean blends marketed in various formats (kg, capsules, and pods), and a full range of related products for bars and cafeterias (ginseng, barley, sugar, and others). It operates mainly in the Horeca sector, offering a complete service to the barista, including advertising material, equipment on loan for use (coffee machines, coffee grinders, etc...) and direct technical assistance, as well as preparation courses for baristas at our headquarters or directly in the cafeteria. The second, Black Soul Coffee, on the other hand, operates exclusively in the Specialty Coffee sector (Organic, special single-origin coffees, etc...) and instead proposes a true Coffee concept.

Search
In our vision, research is primarily understood as a direct analysis of the raw material. This activity takes the form of an initial selection of geographical growing areas and a series of periodic visits to all localized settlements. This allows us to personally monitor how the farmers work and how the harvesting and processing of the beans take place. We use mainly coffee grown in Brazil, Colombia and Ethiopia, which we have selected through years of inspections and evaluations.

Selection
Our selection is a very careful and thorough evaluation process. We collaborate with producers who practice a manual harvest, Picking method, the only one that fully respects the peculiarities of coffee cherries and allows a first selection in the field. For us, the first selection process is essential to count on the healthiest and ripest cherries. Subsequently, the beans obtained from shelling the cherries are scrupulously checked to ensure the absence of visible defects such as spots caused by pests or mold.

Import and Storage
We devote special attention to the import and storage phase. Our goal is to ensure the correct temperature and humidity necessary to preserve the characteristics of the raw coffee during the journey from the lands of origin to our roastery, so we also manage storage in a thoughtful manner to ensure fresh processing at all times.

Toasting
Roasting is crucial to coffee quality. Our method uses a traditional medium roast, "monk's cassock" color, maintaining ideal timing for each type of coffee. We use advanced machinery and constant supervision from the master roaster, who compares the coffee color with previous samples to ensure quality. The roaster determines the right cooking point before cooling, which is done with cold air flows, best preserving aroma and body without adding external elements.

Maturation
After roasting, a process begins during which the carbon dioxide developed inside the bean escapes, causing the aromatic oils to migrate to the surface of the bean. Ripening must take place under the proper environmental conditions, protected from light, heat and humidity, inside specific silos. The ripening time allows each coffee variety to refine its organoleptic characteristics, distinguishing those who seek a refined product from those who prefer large volumes.

Mixing
Blending is a fundamental moment for those who intend to produce excellent espresso. Indeed, one cannot speak of espresso without a blend that combines multiple coffee origins. Our master roasters choose to mix the various crudes following traditional recipes and experimenting with new dosages depending on the aroma and type of espresso we intend to obtain.
